Position Summary:

Directly supervise all FOH food and beverage staff including outlet management, service staff, turnstand and room service staff members. Assure a high standard of appearance, hospitality and service in staff and cleanliness of all food and beverage outlets. Supervise and train outlet management and service staff; manage within budgetary guidelines; develop/implement programs to increase sales and service.  Ensure the wants and needs of guests are consistently exceeded.

Essential Duties and Responsibilities:

  • Manage the day-to-day beverage program with direction from the Director of F&B.
  • Extensive wine and beverage knowledge with proven training methods.
  • Work closely with Logistics Department to maintain par-stock levels on food and beverage inventories and supplies.
  • Lead month-end beverage inventories ensuring proper procedures are followed.
  • Assist with outlet coverage and management of other outlets as necessary.
  • Train, and maintain accountability of all outlet management and service personnel to Resort Standards of Service and upselling techniques through product knowledge.
  • Effectively interface with guests, employees and vendors to improve the experience of all.
  • Oversee the effective planning and scheduling of staff, equipment, and supply requirements for the food and beverage department. Maintain accountability for the cost, utilization, and performance of employees and equipment within budgeted guidelines, guest service expectations and human resource parameters.
  • Demonstrate ability to analyze and react to changes in volume and revenues.
  • Maintain industry knowledge to ensure that Resort is consistently using the most effective and appropriate products and services within budgeted guidelines.
  • Monitor internal cost controls for the department. Ensure quality levels of food and beverage products and maintain standards in production, presentation, services, facilities, and guest satisfaction.
  • Ensure compliance with Resort operating guidelines related to OLCC and TIPS programs. Ensure operations comply with all state and federal laws, rules and regulations, relating to food and beverage service, sanitation, alcohol and tobacco, and ADA requirements.
  • Ensure maintenance of all appropriate sanitation standards including, but not limited to, employee hygiene and uniforms, kitchen food service equipment and preparation areas, food storage areas, receiving areas, washing areas, dining areas, patio, snack bar areas, bar areas, and turnstands.
  • Maintain a cleaning and preventative maintenance program for appropriate fixtures, equipment, appliances, vehicles, etc.
  • Ability to analyze, interpret and act on daily, monthly and annual financial reporting. Assure the efficient and timely submission of all required operational, financial, budgetary and related reports.
  • Perform mathematical calculations involving fractions, decimals, and percentages.
  • Functions as department head in the absence of the Food & Beverage Director.
  • Perform other duties as appropriate.

Qualifications:

  • High school diploma / equivalent, college degree preferred.
  • 5 years applicable management experience in Hospitality food service, preferably in the golf or resort industry.
  • High level of experience in managing an extensive wine program and the training of such product.
  • Proven capability in the areas of budget development, fiscal management, strategic planning, and staff management.
  • Proven high quality written, verbal, leadership and interpersonal communication skills.
  • Ability to analyze and solve problems in a timely manner; efficiently handle multiple duties under pressure with minimal supervision; work flexible hours as required including nights/weekends/holidays.
  • Positive attitude, professional manner and appearance in all situations.
